Is it possible to pull in the “Application” menu as found in Gnome under Ubuntu? I’ve been able to pull in the ‘Debian’ menu, but its quite different, and more cluttered.

Nope. Well, at least not as a standalone menu at any rate. At best though you might be able to fo it by running FVWM under GNOME possibly with use of the GnomeButton command – but then that’s a different scenario to what you’re asking.
